All vendors at the Emmaus Farmers’ Market are the actual growers or producers of the products they are selling. They have chosen to be a part of this market for different reasons, including supplying the public with locally grown fresh products, educating non-farmers about their food supply, and meeting local community members, residents and businesses.

Since the produce is locally grown, the weather and area conditions influence the quantity and quality of the products you purchase.

We have been with the Emmaus market since it began in July 2003.  We bring our USDA inspected American Buffalo meat to the market in our freezer trailer.  We sell burgers, steaks, roasts, ribs, jerky, and sausage.  We follow the Native American tradition to respect the Buffalo, by not wasting anything, so we also sell the hides, fiber, bones, etc. 

Our farm is only 11 miles from Emmaus (about a 20 minute drive) and our farm store is open year-round on Saturdays.  Five generations of my family have lived on this farm.

We raise our Bison with care on our pastures and we do not use hormones, antibiotics, or commercial cattle feed.   Our Bison meat has many outstanding qualities; it is very lean compared to beef, but it is still nice and juicy.  Bison is also tender, with a slightly sweeter taste than beef, and is not wild or gamey tasting.  We have cooking tips and recipes available if needed.

Gottschell Farm is a family farm located in Coopersburg where we grow vegetables, flowers and herbs on about an acre of land using intensive farming methods.  We use crop rotations, cover crops, green manures and compost to maintain healthy soil and healthy crops.  We do not use synthetic fertilizers, pesticides, herbicides or fungicides to grow any of our products.   Diversity of crops allows us to minimize our losses and we grow over 40 types of vegetables, 20 types of herbs and 50 types of flowers.  Our crops are hand harvested at the peak of ripeness and sold at an on site farm stand, farmer’s markets, a CSA and restaurants.   The farm was started in 2007 when we moved here from Philadelphia where we ran an urban farm.  We started farming in 2002, interning at a certified organic farm.  The small size of our farm allows us to own it, oversee all the operations of it and do much of the work by hand.

Liberty Gardens, in Coopersburg, PA, has been run by Kristin Illick and Jeffrey Frank since 2000.  We grow vegetables on our small farm in a sustainable, responsible manner.  We employ practices that include crop rotations, cover cropping, amending soil with organic matter and rock powders, and minimal tillage.  We use no synthetic pesticides, herbicides, or fertilizers.  We are currently “Certified Naturally Grown,” meaning that we follow the same standards as certified organic, which we were from 2000-2003.

Most of our products go to restaurants in the Lehigh Valley and in New York City.  We farm because we enjoy the work, and we love creating products that contribute to the health and happiness of our customers.  Nothing is more satisfying to us that seeing the surprised expression of someone trying a really good tomato for the first time, and hearing them say “I never knew a tomato was supposed to taste like that!”

Kate Sparks is the owner of Lilies and lavender - a cut flower farm located in Doylestown, Pennsylvania. She has been growing and selling flowers at local farmers markets for over nine years.

 

Lilies and Lavender is a member of the Association of Specialty Cut Flower Growers and the Pennsylvania Association for Sustainable Agriculture. Kate is dedicated to providing her customers with the freshest, most beautiful flowers while sustaining the farm, soil, and environment. In keeping with a policy of sustainability she uses only organic fertilizers and the least harmful pesticides. Customers, workers, and pets are safe in her flower fields and greenhouses. She sells flowers at five local farmers markets, at her on-farm stand, to select, local florists and to very discerning brides and hosts who want only the freshest, most beautiful flowers for their special occasions.

 

In addition to flowers Kate also sells potted and cut culinary herbs and dried, decorative, herbal and seasonal wreaths and arrangements.

 

Stop at her farmers market stand, she is always happy to answer any questions about the flowers, and don't forget to bring a biscuit for April.

North Star Orchard specializes in unique and heritage varieties of tree fruit, including over 50 varieties of apples. The farm was started in 1992 on a leased parcel of ground. In 2006, owners Ike and Lisa Kerschner bought their own property, where they planted new trees and expanded into veggie production.  "Our vegetables are grown using all organic practices, although we are not certified." explains Lisa.  "Our fruit is grown using a combination of organic practices and IPM."


Long-time members of PASA, Ike and Lisa strongly believe in the local food movement as well as sustainability.  Lisa explains, "To me, sustainability means the successful combination of growing practices that are in tune with the environment as well as the safety of farm workers and consumers.  But it also means that the farmer is able to make a decent living, including the ability to save for retirement, have health insurance, and be able to offer those quality-of-life items to farm employees."
